Sungmin Choi bought the eatery from the Mustafi family in late October. He says the previous owners had to part ways with the cafe due to a long commute and as a new father, he wanted to have a place of his own after years working in kitchen management at places like F&F Japanese Grill and Edohana Sushi.

He says that he wants to keep customer favorites on the menu and will look to keep the cafe’s regulars happy going forward.

“If there’s gonna be changes, it’s going to be in better service,” Choi said.

Aside from setting his eyes on improved service, he says he wants to incorporate seasonal offerings and maybe even pies and cakes — depending on if he can get a convection oven into the kitchen.

The casual eatery — not related to the original Highlands Cafe at Walnut Hill-Audelia — offers a large selection of crepes, waffles, pancakes and french toast in addition to heartier breakfast staples like omelets and protein bowls.

The cafe will be open on Thanksgiving from 8 a.m. to 1 p.m., according to an Instagram post.

Lake Highlands Cafe is located at 6751 Abrams Rd #100
