Don Henley can’t get enough of their barbecue – and neither can the Greenville lunch crowd – so Baker’s Ribs must be doing something right. Of the ribs, manager Juan Reyna says: “I love ‘em. That’s the best, definitely.” Baker’s Ribs has been at their Greenville location for 13 years. Although they don’t draw in the massive crowds that you might see at the Commerce Street location, says Reyna, the menu is identical, and of course it’s created using owner Joe Duncan’s secret family recipes. The ribs are marinated and then hickory smoked for four hours at 250 degrees, and the brisket is cooked overnight for 12-14 hours. The time, says Reyna, is worth it. Baker’s serves up traditional barbecue sandwiches – sliced or chopped beef, pork, sausage, turkey, ham and chicken – as well as your customary potato or pasta salad, beans and coleslaw. The prices are low, so bring in the whole family – the kids are sure to love Baker’s selection of Sioux City bottled sodas.
