Sometimes, it’s easier to let someone else do the choosing. That’s certainly true at Tramontana, a cozy bistro tucked away in Preston Center where chef James Neel has his tasting menu down to a science. The $69 four-course meal with wine pairings begins with the restaurant’s signature grilled pear salad and is followed by its two most popular entrees – red snapper with lobster risotto and roasted beef chateaubriand – then finishes with the dessert of your choice. (Most people choose the souffle, a specialty of Neel’s.) The wines, mostly from small wineries, are chosen to complement each course, such as the cabernet that sips well with the chateaubriand’s cabernet demi glace. Anyone more adventurous might want the chef to whip together a tasting menu du jour. “I buy everything at the market, so it would probably be whatever is freshest and whatever I would want to eat,” Neel says. Servers can handpick wines for each of the chef’s selections, as well as for any other dish on the menu.
