Cane Rosso will officially open at the Lake Highlands Town Center at 11 a.m. tomorrow/Wednesday.
Remodeling of the former Taco Diner space across the courtyard from Fish City Grill is complete, including installation of a Neapolitan wood-burning oven and additional special touches. An outdoor pergola will be constructed by week’s end to foster patio dining.
Chef Christian Petroni, the chain’s “Culinary Commandante,” has created several new dishes to celebrate the occasion. He revamped the store’s cheesy garlic bread to bring it closer to the version he currently sells at Yankee Stadium and crafted a new chicken Milanese sandwich on fresh wood-fired bread. He updated their spicy penne all’ Amatriciana and brought back Cane Rosso’s cacio e pepe, a cheesy spaghetti with lemon, butter and fresh ground pepper.
Cane Rosso pizzas are 14 inches and prepared in the Neapolitan tradition with a few leaves of basil and a bit of olive oil. They cook at 900 degrees for less than 90 seconds, including the Johnny Utah, with meatballs, provolone, roasted peppers and smoked mozzarella or the Billy Ray Valentine with smoked bacon, bacon marmalade, vodka sauce and sweety drop peppers. Desserts include the s’mores calzone, with melted chocolate, marshmallows and caramelized sugar. The lunch combo offers a 10-inch pie and small salad for 14 bucks.
