Founded by Maricsa Trejo ( a James Beard-nominated pastry chef ) and Alex Henderson, La Casita is a fluid brand. It began as a pastry service, baking for coffee shops around DFW before opening their first storefront in Richardson in 2019. In 2021, the couple opened an event venue called La Casita Garden in Frisco. In January 2023, La Casita Coffee opened its doors in Rowlett.

This upward trajectory will continue at the Half Price Books flagship. No official opening date has been announced, but their website teases “La Casita Coffee?” followed by “shh.. it’s a tropical secret” under their location tab.
