Fito’s Tacos de Trompo will open March 17 near Alamo Drafthouse in Creekside Village. Their spot on the corner was formerly the home of Fuzzy’s Taco Shop.

Fito’s is known for their authentic tacos de trompo — corn tortillas filled with marinated and seasoned pork. The pork, slathered with spicy smoked paprika, is shaved from a trompo — Spanish for “spinning top.” The theory behind the vertical rotisserie is that the meat remains moist and tasty as juices run down its side. Some say the cooking method was adapted from an ancient Aztec recipe, but most foodies now agree we owe this debt to the people of Monterrey.

Taco choices at Fito’s also include chicken, steak, brisket, beef tongue and tripe. They serve tortas, quesadillas, burgers and even a baked potato loaded with sour cream, butter, cheese, avocado and the meat of your choice.

The address for the Lake Highlands Fito’s will be 6760 Abrams, Suite 101, but it’s on the Skillman side of the center. It will be their fifth location in Dallas and their twelfth in the metroplex. Look for daily specials and patio seating when the weather warms up.
