Fiesta, which took over the Carnival at Abrams and Skillman last fall, is positioning that store as a more of a specialty grocer than some of its other locations. As such, it joins Central Market, the soon to open Whole Foods on Park Lane, and the proposed Sprouts at the Town Center as something more than a place to buy milk, bread and lettuce.

Fiesta spokesman David De Kanter said the company noticed that the customer mix in Lake Highlands was different than in some of its other locations, like Ross and Henderson in East Dallas. Hence, it increased and varied the number of products in the 58,000-square-foot store. The Lake Highlands location celebrated its grand opening this week.

Among the changes: Expanded European, African and Latin American products; adding organic produce, natural chicken, beef and pork, including the Buddy’s and Laura’s Lean labels; and expanding the cheese selection.
